I heard the first Saw was just a low budget movie made by a student, but when it became a big hit, there were sequels.
Of course Blair Witch made a lot of money, but only because people didn’t know what they were expecting.

Napoleon Dynamite was really low budget, I heard that Jon Heder only got paid a few thousand to star in the movie, and now look at it, it’s made millions, not to mention a fortune from merchandising!

Easy Rider (1969) is the first that came to mind (just recently watched it). A bike (or misunderstood as “hippie”) movie directed by Dennis Hopper, produced by Peter Fonda and starring : Dennis Hopper, Peter Fonda and Jack Nicholson.
I heard it was only made with $300,000 (approximately) and no one could predict that it was going to be big at the box office and no one would predict that movie CHANGED history and changed the way Americans see themselves AND made an actor become VERY famous (Nicholson). It was one of the movies that brought Hollywood into the new era, the Silver Era (1967-1979) after everyone got drifted away from Hollywood by the end of the Golden Era (1941-1966). Of course no one at that time realize that they were at an end of an era…
Now THAT is success!
Most movies in the Silver Era are low-budgeted and it’ll be easier for you to search them in that particular area, I can’t think any of them other than Rosemary’s Baby (1968).
Jaw-dropping horror movie by Roman Polanski. (can’t say it’s great, I hate horror with a passion)

Nacho Libre and Jackass were two quite low budget films. I know Jackass grossed a lot of money but I’m not sure about Nacho Libre.
A football movie called, Facing the Giant, was also made with $100,000 and grossed $10,000,000 in a limited release.

Everyone else missed the most obvious one: My Big Fat Greek Wedding, which cost less than $5 million to make and earned over $200 million in the U.S. alone.
It remains the most financially successful indie film ever.
